Vitamins and Minerals
Of the many vitamins and minerals scientists have identified, there are five main vitamins and between six and eighteen minerals and trace elements that are universally recognized as essential nutrients that we should, ideally, receive from the food we eat. These nutrients, which play such a significant role in the maintenance of a healthy body, today with the appropriate recommended daily allowance (RDA) for an average healthy adult.
Antioxidants
Many foods, including a large number of healing herbs, contain antioxidants, substances that provide protection against destructive molecules called free radicals. These molecules, when present in excessive numbers, can cause damage to the body's cells. They are manufactured in the body as a result of metabolization or from environmental pollutants that enter the body during respiration. Three vitamins, A, C, and E, in conjunction with the mineral selenium, are antioxidants that prevent the formation of free radicals or act as scavengers that mop up these undesirable agents.
